Super simple for shabbat or to break the fast.

Yes!! That’s a 25CM cookie!!

Ingredients

  • 1/2 cup brown sugar

  • 1/2 cup white sugar

  • 1 stick of margarine (room temp)

  • 1/2 cup peanut butter

  • 1 egg

  • 2 teaspoon vanilla sugar

  • 1 1/2 cups flour

  • 1/4 teaspoon salt

  • 1 teaspoon baking soda

  • 1/2 cup chocolate chunks

Directions

  • Preheat the oven to 180°C.
  • Cream together the sugars, margarine and peanut butter. Then add the eggs and vanilla.
  • Add in the dry ingredients, followed by all but a couple of the chocolate chunks.
  • Form the dough into a 7 inch round disk on the parchment lined sheet pan.
  • Top with remaining chocolate chunks.
  • Bake for 19 minutes and let it cool a bit before slicing.

Notes

  • Variations: 

    You might want to try some variations on the strudel filling, such as half pear or half apple instead of all apples, or use dried cranberries, almonds, and ground ginger instead of raisins, walnuts, and cinnamon. If you decide to make the strudel with pitted fruit such as plums or peaches, add 3 tablespoons cornstarch to the filling to absorb the extra moisture.
